A coconut #1 would have very good defensive stats but probably low agility. Other fruits are pretty squishy but a pineapple would be #2 for obvious reasons

I would say durian is a good choice.
It has decent size and Hard spiky exterior.
Too weak on the inside, Pineapple has the same spikes and a hard exterior, + the inside is hard to pierce without the correct fruit.
