The gems ARE canonically sexless, whether you like it or not. They present as female, and are reffered to with she/her pronouns by default, sure, but they are sexless because they aren't meant to serve a reproductive purpose. And- they aren't sexless for the "snowflakes" to have their waifus, it's literally because they're sentient rocks, and on top of that, AI.
They are non-binary women. Meaning that they are nonbinary, but don't mind being perceived as women. It is unclear whether or non Rebecca Sugar (creator of Steven universe) made them non-binary women because she is a non-binary woman, or made them non-binary so that she could bypass the sensors and get lesbians into a g-rated show.
