Since it isn't a thing in real life of people coming back from the dead, I think Necrophilia doesn't have a more "specifics" of what qualify as necrophilia.
If we ever reach that day where we can bring people back... I would argue that necrophilia is specific to having intercourse with a body without life.
The whole idea of a death knight is a soul that a person that had the soul cannot leave, so that is a construction of the souls mind and not a reanimated corpse.
